I’ve made it no secret that I’m a huge fan of kale, for its taste AND its amazing nutritional benefits. But I didn’t come up with this – an online petition to make today National Kale Day. I’ve been doing a lot of research lately about green smoothies, mostly because I’ve been battling the same cold/allergy mix everyone else has for a few weeks now. I think I might try this one today:
Kale Pineapple Smoothie
1/4 of a pineapple
1 large handful of watercress
4 – 6 kale leaves
2 celery stalks
1.) Wash all ingredients
2.) Remove rind from pineapple.
3.) Chop all ingredients to fit through your juicer.
4.) Juice & enjoy!
Pineapple – apple, pear, orange, grapefruit
Watercress – spinach, romaine, mustard/collard/beet (beetroot)/turnip greens, green cabbage, arugula (rocket)
Kale – spinach, chard (silverbeet), romaine, green cabbage
Celery – cucumber, celeriac root, lettuce, zucchini
You can find so many of those items at the Urbana Market at the Square every Saturday 7-noon…no oranges or grapefruits, but most everything else in abundance! In addition to gorgeous mums and fresh-cut flowers, you’ll find squash of every shape and size, casseroles, gelato, salsa, pasta, and wonderful arts-n-crafts.
This week I bought:
- collard greens (!!!)
- pak choi (a leafy green Chinese veggie closely related to bok choi)
- honeydew melon
- golden delicious apples
- winter and acorn squash
- cherry and strawberry/rhubarb fruit spreads
- sweet corn
- red and green peppers
I cook before work almost every morning so the veggies (the focal point of my dinner) are ready when I get home from the gym that evening. Yesterday I baked butternut squash fries and stir fried green beans and pak choi. Today I fried duck eggs (so good) with fresh parmesan while I was also stir frying zucchini. It sure beats having to cook at night and then eat dinner even later…
I’m befuddled by the collard greens. The super nice Market vendor suggested cooking them with a ham hock (or some other type of fat, I guess), but I’m kind of hoping to go in a different direction. I’ve asked a friend for her recipe and once I get that, I’ll share later this week. I suppose I could just blend into a green smoothie, eh??
Kind of sad that in looking for a pic online for a smoothie, I had like seven choices…but there were 134 different milkshakes. Not a surprise, I suppose. We’ll pretend it’s a green and white striped smoothie. If I can ever figure out how to do THAT with a blender, I’ll let you know!
